Which is healthier/more nutritious? I already consume the yolks raw, or at most- only partially cooked.

Depends: How "raw" is the flora of your colon?
Nutrition doesn't change statistically significant through denaturation of proteines (which an egg mostly in this context consists of).
I like my eggs boiled (not cooked!) for exactly 270 seconds.
