I sauteed a handful of diced onion, a serrano pepper, and a clove of garlic in a little over a tablespoon of butter, cooked in a tablespoon of flour till it had some color. Added a cup of water, tsp of instant bouillon broth, 1/2 tsp of sodium citrate, melted in about a cup of cheese, and added in salted and seared ground beef.

    It's an emulsifier for the cheese. Handy stuff, makes cheese sauces a snap. Also reduces acidity so can be used for spherification with acidic ingredients, and medically for acidosis, gout, and kidney stones.
