Ingredients:
- 1 lb ground beef
- 5 dried ancho chilies
- 3 dried guajillo chilies
- 2 dried chipotle chilies (for some smokiness and heat)
- 2 cups beef broth (or water for reconstituting peppers)
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed (optional, for a thicker chili)
- 1 tablespoon cumin
- 2 teaspoons smoked paprika
- 1 teaspoon oregano
- 1 teaspoon coriander
- Salt and black pepper to taste

Instructions:

- Remove the stems and seeds from the dried chilies.
- Heat 2 cups of beef broth (or water) until it simmers, then remove from heat.
