Take a bowl and add 500 gram of flour (for 4 pizzas)
Add one teaspoon of salt and mix it with the flour.
Now take a cup with 325 millilitres of warm water and add 7 grams of dry yeast to the water and mix it together.
Now pour the cup of water with the yeast into the bowl with flour and salt, and mix it together.
When you mixed it, you take the bowl and pour the inside on a flat surface in your kitchen, use a little bit of flour on the surface and on your hands to prevent the mass from sticking.
Now start to knead the dough, if you feel like it's still too sticky, add a little bit more flour and proceed kneading the dough, use the palm of your hands to push it down and stretch it, proceed doing this for 5-10 minutes. Push down, stretch it, fold it back and repeat.
After a ten minutes, create a ball out of it and remember to keep using flour to prevent sticking, roll the dough ball through the flour.
Now get a big knife and divide the dough into 4 equal pieces, and create 4 little balls of dough.
Now take a tray and cover the surface of the tray with a thin layer of flour.
Place the 4 balls of dough onto your tray and make sure there's some space between them, enough space because they will double or triple in size. Add a little flour on top of the balls.
Now take a cloth and run some tapwater over it, make the cloth wet. Now squeeze the cloth in your sink so that the excess water drains away, you want your cloth to be damp and not too wet. And now place this cloth over your tray covering the dough, the cloth doesn't need to touch the dough, it just needs to seal it.
Now let this tray rest in your kitchen on room temperature for 2-3 hours or more. Make sure it's not too cold, turn your AC off in the kitchen.
After a few hours, check up on them and you'll see they have doubled or tripled in size.
Now take one ball of dough and keep the others covered, add some flour on a flat surface and press your dough down on the flour covered surface, then flip it over on the other side and press it down on the flour as well.
Now start shaping it into a flat round pizza, be gentle with it because at this stage the dough is very delicate.
Once you have a thin flat round pizza, take your tomato sauce, I suggest to use a PASSATA, you can find this in a supermarket, and all you need is one or two tablespoons of sauce and spread it with your spoon over pizza.
Drizzle some olive oil over the tomato sauce and add a pinch of salt.
Now take some fresh mozzarella and rip some pieces of it and add it on top of your tomato sauce, spread it evenly so you have cheese in every bite.
Now take 4 or 5 basil leaves, don't chop them, just put them on the pizza.
Now put your pizza in the oven for 6 to 8 minutes at 220 degrees Celsius and there you have it. (pre-heat your oven)
You can drizzle a little bit extra virgin olive oil over it when you take the pizza out of the oven.
Enjoy, and of course, you can make this with toppings to your liking, except pineapple, no pineapple please😋
