Scrippelle 'mbusse - This is what looks like a pancake soup, my mother always made this when I was a kid. They are unsweetened crepes in a vegetable broth. It's a pretty unknown dish but It's delicious.

For this you need you need a broth, you can make your own broth or if you want to save time, you can buy a good vegetable broth.
If you want to make your own broth, cook some carrots, onions, celery and tomatoes in 2 litres of water on a low heat for about an hour and season it with some salt and pepper.
To make the unsweetened pancakes, take a large bowl and crack 3 eggs and add 4 tablespoons of flour and mix it together.
Add a pinch of salt and mix it with the flour and eggs.
When you mixed it together, now you need to dilute it with water, I usually do it on sight but the amount of water is between 150 and 200 millilitres of water.
Stir and mix it together and its very simple, now you can start making your crepes.
Take a pan and use a brush or a piece of cotton to brush the surface of the pan with some sesame oil and heat it up.
When the pan is hot, add your pancake batter to the pan and it's like making pancakes, just cook them on both sides for not too long and plate them on top of each other. Do this until you've used up all your batter.
Now grate some fresh Parmesan cheese, sprinkle it on top of your pancakes and roll your pancakes up and plate them next to each other, so that all your rolled up pancakes have Parmesan inside.
Now put 2 or 3 pancakes in a soup plate and add your (hot) broth.
Cut some fresh parsley and sprinkle it on top.
Finish it off with more Parmesan on top.

I made this today, I loved it so much, I also finally bought some real Parmesan, not the pre-grated one from a plastic container, I bought the real cheese and it's so much better omg thank u so much for ur recipes, unlike the idiots on ip2, you teach us while they're trying to show off. Your recipes are very easy to do. Please post more.
