I’ve been making egg drop soup lately. It’s really good, cheap and easy to make. Also fried rice is good.

Stove top baked beans! Surprisingly good, just a bunch of stuff already in my cupboards.

how cool! i wonder how many tablespoons a large knob of butter is. hmm. i am not a cook but i'm trying to feed myself better in this pain-in-the-ass pandemic. i made this shrimp stir fry and it was awesome and easy for a non-cook like me. https://www.foodnetwork.com/recipes/ree-drummond/shrimp-stir-fry-2171534

I just made normal mash potato? But i may have overcooked em coz it was difficult to get the texture so that i could form the patty? I eventually managed to do it but obviously i had to dip them in egg before throwing into breadcrumbs and the egg would cause it to lose shape quite easily! I didnt put in enough tuna. Need to make them again sometime soon and hopefully better second time around!

If you want something easy to make (but still takes some practice to master) that is relatively cheap and with few ingredients, I'd recommend chive & cheddar (you can use whatever cheese you want though, preferably one with a lot of taste) omelettes. Omelettes in general are quick and easy once you get the hang of it and you can add pretty much anything you want to it. As for what I cooked, cheese ravioli served with sauteed mushrooms and herbs.

Homemade nachos. Buy corn tortillas, cut them up into triangles, fry and you have tortilla chips. I made homemade spicy cheese sauce and used ground chicken. It’s not bad. I also made a PB and banana smoothie. It’s easy and only requires three ingredients: peanut butter, banana, and liquid of your choice (I used milk). I added cinnamon, nutmeg and allspice too

I made a stir-fry with rice, vegetables and tofu. Added some soy sauce, stock powder, and chilli powder for flavouring. Easy to make, cheap and healthy. Since it's winter here, I've also been making pumpkin soup pretty regularly. Super easy to make, and really delicious.

Recent discovery is courgette fritters https://www.olivemagazine.com/recipes/vegetarian/courgette-fritters/

We also started getting local farm produce delivered since local businesses aren't doing so great. They give us mystery salad and mystery microgreens. It's actually really fun to adapt and try different things every week. It makes us eat more in season which is more ecologically responsible.

I've been the cook in my family the past few weeks and last night I made salmon patties, broccoli and rice. :)

I made a rice dish using some spices I had bought when I was on vacation a few weeks ago. It smelled incredible, but it tasted just eh. Not bad, just underwhelming.
