These versions are brand new but unreleased. This is seperate from the beta versions because these can support versions and devices that the current release builds can't

Why would I want a specific version?

Well, let's explain it like this:

Some specific tweaks, tools and utilities available for jailbroken devices may not work properly for some specific Unc0ver versions, and will require a different version.
