No, I don't think they can cancel all laws with a contract. Slavery is illegal nowadays.

Such contracts just say they want everything your state allows them to take. You can still sue them if they try to take more.

The situation with such contracts is possible only because the government makes regulations to protect customers from harm. And everyone knows such regulations exist. We would have better contracts otherwise.

Again, you seem to be wandering off course. Many contracts require non-judicial arbitration of disputes. They also commonly prohibit joining a class action. This has been ruled legal many times.
