If it's just about ads, just install Firefox and Ublock Origin.

That doesn't kill ads in apps at the host level.

I recommend getting a custom ROM without Google play services. You don't necessarily need root, as this can be a security risk of it's own.

LineageOS is a good starting point, or GrapheneOS for enhanced security and hardening although Graphene only supports the Google Pixel 2 and higher.

For adblocking, you can run a local VPN firewall like blokada (free) or netguard pro (paid, more features). Or just use Firefox with an adblocker, or something like Bromite or Brave which has adblocking built in.
