That sounds awesome, I'm going to try this. I don't particularly care for merlot, does it add a lot to the dish, or do you think sherry or beer would work as a substitute? I know, it's terrible to be changing stuff before you make it, but I'll have half a bottle leftover to drink ya know.

Sherry would be fine, not sure about beer.

I got the meat cooking in the crock pot now. Later I'll do the taters and baby carrots -- all the store had, go figure. I did add the onion (and peppers cause I gotta use them) with the meat to cook, and I used a Yuengling beer cause it was free. So far so good, the broth is pretty tasty.
