There were many "paleo" era diets, and the modern language about this (ie "the paleo diet") is just an advertising concept to push unhealthy diets of eating animal corpses.
But not all these very old diets were healthy, eg eskimos:
Eskimos have high rates of cardiovascular disease. And they always have- even hundreds of years ago - which we know because frozen bodies found of eskimo people had cardiovascular disease.
