I've always found it amusing on chromatic grounds.

"White" people's hair can be blond, sandy blond, ash blond, strawberry blond, black, light brown, dark brown, red; their eyes can be grey, blue, green, amber, brown.

Meanwhile the "people of color," from Africa to India to China to Arabia to the Americas - black hair, brown eyes, and... that's it.

Might be more accurate to call the rest of the world monochromatic, and the white minority diverse.
