when we go to websites and it gives us a warning that they are collecting "cookies", and we have to click OK...
what the eff is up with that? do we have cookies police that are watching to see if we warn people about collecting cookies?

You don't have to. Use a cookie list on your ad blocker. Ublock Origin has one built in you could enable, under "Annoyances" in the filter list preferences.
