Yeah, we all know. This is one of the most widely known statistics in existence. The problem is everyone just makes up the reason for the disparities without any actual evidence. Then they use this graph as evidence for their bullshit reason.

Rice. Much more labor intensive to produce than equivalent food like potato. This created a culture of hard work.
